What happens when a girl  raised to be a foodie falls in love with and marries a meat and potatoes man? A LOT of compromise, mostly on my part.  The years fly by oh so quickly and two little sprouts pop up, let me mention that they are extremely picky little sprouts.  The female sprout is slowly opening up to become a cautious little foodie, while the male sprout is stubbornly entrenched in being a meat and potatoes miniature man.

The MAN is currently off doing whatever work stuff he does for 1 whole week, here is where I insert the Boo's and simultaneous Yay's.  Female sprout is with the in-laws and the male sprout is gleefully repeating the mantra, "Daddy's gone, it's drive Mama crazy time!"

With a soft laugh and a kiss on his forehead I tell him, "Lets not make Mama break out the alcohol."

LETS GET STARTED MY FOODIE FRIENDS!

I was doing my weekly, okay...fine, daily perusal of pinterest postings and came across one for this scrumptious looking breakfast sandwich - toasted bread, melted cheese, poached egg, with bacon and avocado - Looking at the picture I thought "OH that looks sSsoooSOO good right now, and I have all the ingredients to make it, yay me.  Now lets click on the link and see how that one is made.  I'm electronically whisked through the net to a lovely bloggers site...where I scroll, and scroll, and scroll, and scroll.....hit older posts and scroll some more, after 4 pages of scrolling through not only recipes but fashion pics and idea posts (all under the recipe category) I finally give up!!

Off to the kitchen with picture inspiration in my mind!!

Here is my version of a breakfast sandwich!!! The recipe will follow - lol - (don't you hate the sites that just say oooh look at the picture of what I made, and then there's no recipe!

Inside this delicious sandwich are poached eggs, rotisserie chicken slices, american cheese, topped with an avocado verde sauce on grilled bread!!

Makes 1 Sandwich (do simple math (I know don't yell at me, I hate math too) to make multiple servings))

Ingredients:
2 slices of bread (whatever kind you like)
Margarine (to butter 1 side of each piece of bread)
1 slice american cheese
3-4 slices rotisserie style chicken breasts (I used Oscar Mayer)
2 eggs
about 1/2tsp regular greek yogurt
about 1/2 tsp sour cream
about 2-3 slices avocado
about 1-2tsp salsa verde (my fave is the Archer Farms Salsa Verde from Target) - -this is to taste

1. Bring some water to a roiling boil. While the water is heating, butter one side of each of your slices of bread.  Place both slices buttered side down in a large fry pan on LOW heat (we want it to cook slowly).  Add slice of american cheese to one of the bread slices. 

2.  Crack two eggs into a bowl and use a fork to break the yolks but do not wisk or stir (we don't want a scramble).  Dump eggs into roiling water.  (Have a slotted spoon ready - smaller the holes the better) - - Stir/flip eggs every so often during cooking to keep water from boiling over and help cook through faster.

3.  While the eggs are cooking put chicken slices in pan next to bread to heat, turn them once during heating (about 1 minute or so),  Once heated add chicken on top of cheese, be sure to check bottom of bread to make sure it is not cooking to fast.

4.  Check the eggs they should be just about done by now - scoop them out of the water with your slotted spoon or fryers ladle, make sure to let them drain well, shake the spoon over the pot to get off as much water as possible.  Then plop the eggs onto the chicken thats in the other pan.  Once you have all the eggs in your sandwich you should be able to flip the naked slice of bread to check the doneness.  Bread should be a beautiful golden hued grilled perfection by now, if not bump the heat up just a notch and watch carefully until they are ready!

5.  Remove your sandwich to a plate.  Quickly mix the yogurt, sour cream, salsa verde and mashed avocado in a small bowl, your sauce should be a consistancy that looks something between a hollandaise sauce and guacamole.  Taste test the sauce to make sure you don't want to add more of something.  Once it's how you like it, spoon it onto the eggs and place your bread slice on top. Voila!!

Scrumptious deliciousness!!  My little sprout had blue scrambled eggs (egg whites with blue food coloring and a dash of milk wisked together!)
